The 757 Doesn't Need Another Smash Burger. It Needs Later Hours.

The Take is opinion — argued with evidence, labeled as such. Disagree? Good. That's the point.

Here's a fact about Hampton Roads nobody in the restaurant business wants to say out loud: this is a military town, a port town, a hospital town — a town full of people who work nights. And half our best kitchens close at 9.

Think about who that strands. The nurse coming off a 12-hour shift at 11pm. The sailor back from duty at midnight. The line cook who just fed you dinner and now can't get fed himself. The entire night-shift economy of the 757 runs on gas stations and drive-thrus, in a region that brags about its food scene.

The city that feeds its night shift wins my loyalty forever.

The counterargument

"Labor costs." "Nobody comes out late on weeknights." "The math doesn't work." Fine — then explain the lines at the taco trucks at 1am. Demand is standing on the sidewalk; the dining rooms just closed on it.

The ask

We don't need a hundred late-night spots. We need a dozen — one per neighborhood, kitchens open till midnight, doing the thing they already do well. The first great restaurant group to figure out the night shift in the 757 will own a customer base with zero competition and infinite gratitude.

Agree? Disagree? Know a spot that actually stays open late? Tell us — the best responses run next week.
